What does a person do with 25 mangoes!? I made Mango chutney.
Mango Chutney (mild)
makes about 6 - 7 bottles (500mL)
10 mangoes
1 cup finely chopped onion
2 cups finely chopped red bell pepper
1/2 cup minced fresh ginger
1 cup chopped dried apricots
2 cups brown sugar
3 cups apple cider vinegar
1 cup lemon juice (lime juice will be delicious too)
4 tsp salt
1 Tbsp mustard seeds
1 1/2 Tbsp dried chili flakes (adjust to reach the desired level of spiciness)
Prepare your preserving jars.
Peel the mangoes and slice the pulp away from the pits, cube the fruit. If the fruit is really soft, scrape your knife down the pit (working over your pot) from the stalk end to the bottom end to get the maximum amount of pulp off the pit.
Combine all the ingredients in your preserving pot and bring to a boil over medium heat. Simmer, stirring often for about 1 hour until the mixture begins to thicken. Reduce the heat to low and stir constantly until the chutney is thickened to the desired consistency.
Remove from heat and ladle into hot sterilized jars, leaving 1/2 inch (1.2 cm) head space. Wipe the rims clean and seal the jars according to the manufacturers instructions. If you process your jars in a boiling water bath, boil for 10 minutes in a boiling water bath.
*(I don't process in boiling water and always have success.)
Mango Ice-Cream
serves 4
1 mango
1 cup chopped, frozen strawberries
2 cups ice cream (or yogurt)
Peel the mango and slice the fruit away from the pit. Put all the ingredients into a food processor. Use the pulse function until most of the frozen strawberry pieces have been chopped up. I then turned the dial to 2 (fastest) and let it cream everything together. I did stop the machine and push everything down the sides to avoid large bits of fruit. Then I let it blend it all together.
Serve immediately for a "sort serve" consistency. If you want it to harden up a bit put it in the freezer for a bit (I don't know how long as the kids gobble things up immediately.)
Forgive the poor photo. I actually had to step out of the kitchen to get a photo or they would have eaten mine too!
For a dairy-free alternative use almond milk or another non-dairy milk substitute.
If you have a strawberry allergy in your house use another soft fruit instead but freeze it first so that you get ice-cream instead of a smoothie.
